I don't know the Sanpe, but assuming it's the same style as their orange or blood orange sodas, I don't see how it wouldn't work although I would wonder about the sugar level being maybe a tad low.
I've had the vermouth and / or amaro with grapefruit soda with a wide range of sodas and it has always worked.

Here in the USA, identifying the right kind of pomelo/grapefruit soda feels tricky. Would the San Pellegrino Pompelmo be a good benchmark?
